Screen orientation is automatically set to turn the image when you turn your iPhone from portrait to landscape and back, but you can set it to stay at one of those orientations. Really handy, say if you are reading a book on your iPhone or iPad in bed to stop it alternating.
To set it so it doesn’t change, swipe up from the bottom of the page with a big swipe so you get the control centre, and click on the button that looks like a padlock with the arrow circling it. Want it to orient again, just turn the button off again. I’ll add an image in the comments with the control centre and the button.
